Chicken 65














INGREDIENTS

Chicken – ½ kg (wash and cut into cubes)
Green Chilly – 3
Corn Flour – 1 ½ tsp
Pepper Powder – ½ tsp
Chilly Powder – ½ tsp
Ajinomoto – ½ tsp (optional)
Ginger Garlic Paste – 1 tsp
Ginger (finely chopped) – ½ tsp
Garlic (finely chopped) – ½ tsp
Curry Leaves – few
Coriander Leaves – to garnish
Salt – to taste
Cooking Oil

METHOD

Mix chicken, salt, ginger garlic paste, ajinomoto (optional), ¼ tsp pepper powder,and corn flour in a bowl and let it to sit for 15 minutes. Heat oil in a pan and fry the marinated chicken pieces in batches till it is light golden brown in color.

Heat 3 tbsp of oil in a pan and saute it with chopped ginger and garlic, chopped chillies and curry leaves. Now add remaining pepper powder, chilly powder, a pinch of salt, red color and and a little of water and fry for few seconds. Now add cooked chicken pieces to it and keep frying it until the gravy coats on the dish well and the gravy becomes dry. Garnish with chopped coriander leaves and serve hot.

If you prefer, you can add 1 egg and a pinch of red/orange food color while mixing.














It`s a really good finger food and starter.

Chettinad Chicken Gravy














INGREDIENTS

Chicken- 2 Lbs. (remove the skin & cut into medium sized pieces)
Salt
Fresh grated coconut- 1 cup
Large onion- 1 (chopped)
Medium tomatoes- 2 (chopped)
Grated ginger- 1inch piece
Garlic- 5 cloves (crushed)
Black pepper- 1/4 tsp
Red chili powder- 2 tsps
Poppy seeds- 2 tsps
Coriander seeds- 2 tsps
Fennel seeds- 1 tsp
Cinnamon- 1 piece
Cloves- 2
Garam masala powder- 1/2 tsp
Turmeric powder- 1/2 tsp
Oil- 6 tablespoons
Lime juice- 2 tablespoons
Curry leaves- 2
Chopped cilantro (coriander) leaves

METHOD:

Dry roast the poppy seeds in a pan and crush. Soak it in little water for 10-15 minutes. Then grind the soaked poppy seeds with coconut, fennel, cinnamon, cloves, cardamoms & turmeric. Make it into a smooth paste.

Heat oil in large pan and fry the onions until golden. Add the ginger, garlic and fry for couple of minutes. Then add the red chili powder and the ground paste. Fry for 5 minutes. Add the chicken pieces and fry for 5 more minutes. Then add the tomatoes and stir-fry for 7-10 minutes. Then add 2 cups of water & salt. Cover and cook for about 10 minutes over medium heat. Then remove the cover and cook till desired consistency.When it is almost cooked add the lime juice and curry leaves. Fry for 5 more minutes and remove from fire. Garnish with chopped cilantro leaves.













Serve hot with rice / Idly or Dosa.

Chicken fry
















Ingredients:

Chicken- 1/2 kg
Small onion- 100 gram
Tomato- 2
Garlic- 4
Ginger- one small piece
Green chilies- 2
Turmeric powder- a pinch
Chicken masala powder- 1 spoon
Grated coconut- 3-4 Spoon
Oil - 3 Spoon
Salt- As required

Method:

Half cook the Chicken in 3-4 cups Water with a pinch of Turmeric powder and keep this aside.
Heat Oil in a pan add Garlic, Ginger, Small onion and Green chilies. Fry till it becomes golden brown in color.
Then add Tomato and fry till it becomes soft.
Then add Turmeric powder, Chicken masala powder, Grated coconut and fry for few seconds.
Make a paste of the fried items.
Heat the pan and pour 3 spoons of oil.
Fry the ground paste in oil till the raw smell of paste goes.
Once raw smell goes add half cooked Chicken with the water. Cook for 15-20mins.
